Although not specific to the humanities, philosophy Professor Rob Loftis and the University of Waterloo Library have two very interesting ways to visualize the flow of scholarly information.

Research Management

There is a whole world of software out there designed to help you keep track of your research, and turn those citations into well-formatted bibliographies and works cited.  The university pays for EndNote, and there are other, fantastic free web tools, too.
